  • Brie Cheese — I use a 6-ounce (170-gram) wheel of brie as that's the standard size where I live, but an 8-ounce (225-gram) wheel works just as well—it may just need an extra minute or two in the oven. I don't recommend using double-cream brie; it can turn the whole situation a little too goopy for a dip (yes, that's possible). Make sure your brie is cold straight from the refrigerator, not room temperature, or it will melt too quickly.
  • Cranberry Chutney or Sauce — I opt for my homemade cranberry chutney recipe, but any whole berry cranberry sauce works beautifully. Making baked brie with cranberry couldn't be easier—truly, if you can open an oven door, you can make this appetizer. Below is the step-by-step breakdown so your brie turns out warm, gooey, and dangerously irresistible (consider this your warning).

Step #1: Preheat

Preheat your oven to 350°F (175°C) and place the rack in the center. Yes, we're committing to turning the oven on for this—it's worth it.

Step #2: Prepare the Brie

Set the chilled brie on a piece of parchment about twice its size and place it on a baking sheet or in an oven-safe dish. Lightly score the top of the rind in a crisscross pattern (think "gentle tic-tac-toe," not "aggressive pumpkin carving"). This helps the cheese melt evenly.

If you want extra flavor without doing much, toast the nuts. Heat a small skillet over medium, add the chopped pecans or walnuts, and toast for 2–3 minutes until fragrant. Shake the pan often and don't walk away—nuts burn the moment you get confident.
