This quick and easy broccoli cheddar soup is the BEST tasting broccoli soup with cheese - ever! Creamy, cheesy, and packed with savory flavors and tender broccoli, this soup can whipped up in 35 minutes when using the Instant Pot, with slow cooker instructions also included, making it an easy, comforting lunch or dinner.

When made with vegetable broth, this broccoli and cheddar cheese soup can be made entirely vegetarian, or you can use chicken broth if that's what you have on hand. As it's flourless, it's also gluten-free, grain-free, Keto and low carb. This recipe also includes low FODMAP * and lactose-free options.

Equipment

Instant Pot

If making broccoli cheddar soup in the Instant Pot, you'll need:

  • 6-quart Instant Pot, 8-quart Instant Pot, or comparable electric pressure cooker.
  • Plastic spoon or spatula - for stirring and scraping. I love this Instant Pot spatula.
  • Plus, all the equipment listed in the "Remaining Equipment" list below.

Slow Cooker

If using the slow cooker / Crock Pot method, you'll need:

  • Slow cooker - I use an older model of this 6-quart Crock-Pot
  • Large skillet
  • Stovetop
  • Heat-resistant spatula
  • Plus:

Remaining Equipment (for both methods)

  • Measuring cups and spoons
  • Chopping board and knife
  • Large bowl
  • Immersion blender (recommended), regular blender, or a potato masher. I use an inexpensive immersion blender, and it's served me well for years with so many recipes.
  • Cheese grater - if your cheese isn't pre-shredded. I highly recommend shredding your own cheese.
  • Ladle

Ingredients and Dietary Substitutions

These ingredients for broccoli cheddar soup give it the best flavor. While some of the ingredients are optional, using all of the ingredients listed will give you the most flavorful soup.

  • Oil and Aromatics: I use garlic-infused olive oil and leek greens for low FODMAP. Otherwise, you can use extra virgin olive oil, fresh minced garlic, and white onion instead.
  • Butter (Optional): To add extra richness to the soup, I add some unsalted butter or ghee (clarified butter), but this is optional.
  • Broth: When making vegetarian broccoli cheese soup, I use vegetable broth (homemade or store-bought). Or, you can use chicken bone broth (homemade or store-bought). If needing low FODMAP, make sure the broth you use is compliant.
  • Broccoli: You can use fresh or frozen broccoli when making this recipe at the same amount of cooking time. Using frozen broccoli makes this recipe so much easier as it is pre-chopped, and you don't have to worry about it going bad quickly. If needing low FODMAP, make sure you only use the florets or heads of the broccoli as the stems are higher in FODMAPs per Monash University's Low FODMAP Diet App. Otherwise, you can use a combination of broccoli florets and stems.
  • Herbs and Spices: Don't let the long list of herbs and spices deter you from making this recipe as they are actually really quick to measure out. I use dried chives (optional if using onion), fresh or dried thyme, nutritional yeast (optional - adds extra cheesy flavor and nutrients), sea salt and black pepper, smoked paprika, and ground nutmeg (optional, although it adds extra warmth that I love).
  • Mustard: I add Dijon mustard, which adds some tangy flavor. If needing low FODMAP, make sure the Dijon mustard you use is garlic and onion-free.
  • Cream: I use heavy cream, which brings the best consistency, richness and flavor for broccoli cheese soup. Use lactose-free heavy cream if needed.
  • Cheese: I typically opt for medium sharp cheddar cheese that I shred myself using a box grater. Store-bought shredded cheese typically contains more carbs and additives. I've also tested this recipe with sharp cheddar and old cheddar, noticing very little difference in flavor.
  • Thickener (Optional): The soup may be thick enough for you without adding a thickener. If you prefer a thicker soup, to keep it flourless, gluten-free and grain-free, use xanthan gum. Feel free to use other thickeners (quantities will vary).

How to Make Broccoli Cheddar Soup

Here's how to make broccoli soup with cheddar cheese in the Instant Pot (pictured) or slow cooker:

  1. Sauté Aromatics: For the Instant Pot, press “Sauté.” For the slow cooker, heat a large skillet over medium heat. Once hot, add oil and butter (if using), swirling to coat. If using garlic, sauté for 30 seconds, stirring constantly. Add leek greens (or onion) and cook until softened, about 2 minutes (4-5 minutes if using onion).
  2. Deglaze: Hit "Cancel" on the Instant Pot. Pour in 1 cup of the broth, scraping up any browned bits on the bottom with a plastic spoon or spatula. If using a slow cooker, transfer everything to it now.
  3. Build the Flavor: Stir in dried chives (if using), nutritional yeast (if using), thyme, salt, pepper, smoked paprika, nutmeg (if using), and Dijon mustard. Add the chopped broccoli and remaining 2 cups of broth and stir again.
  4. Cook the Soup:
    • Instant Pot: Secure the lid, set to Pressure Cook (Manual) for 5 minutes, then do a quick release.
    • Slow Cooker: Cover and cook on low for 4-6 hours or high for 2-3 hours, until the broccoli is tender and luscious.

  1. Blend for Creaminess: Remove the lid and ladle out half the soup into a large bowl. Blend the remaining soup using an immersion blender (recommended), regular blender, or potato masher. Stir in the reserved portion for a mix of creamy and chunky textures.
  2. Add the Cream: Set the Instant Pot to "Sauté" on low heat or the slow cooker to high. Stir in the heavy cream and let the soup warm until it begins to simmer.
  3. Melt the Cheese: Once simmering, add the cheddar ½ cup at a time, stirring constantly until fully melted. Scrape the bottom occasionally with your spatula to prevent clumping. If using a slow cooker, cook on high for an additional 30 minutes, stirring occasionally.
  4. Thicken (Optional): For a thicker soup, sprinkle xanthan gum over the top while stirring until the desired thickness is reached, or use your thickener of choice. Press “Cancel” on the Instant Pot or turn off the slow cooker.

Why isn't my cheese melting?

If your cheese isn't melting smoothly in your broccoli cheddar soup, you may be adding too much at once or the soup might not be hot enough for it to melt properly. Adding heavy cream can lower the temperature, making it harder for the cheese to melt. That's why my instructions include warming the soup to a simmer after adding the cream before gradually stirring in the cheese.

  2. Serve and Store: Ladle your broccoli and cheese soup into bowls and garnish with extra chopped broccoli, shredded cheese, black pepper, or fresh thyme. Store leftovers (if any - it's hard to stop eating!) in an airtight container in the refrigerator for 3-4 days.

I recommend eating this broccoli cheddar soup with crusty bread, breadsticks, or crackers compliant with your dietary needs, a grilled cheese sandwich (yes, more cheese! It's so good!), or simple green salad, being mindful of the fructose content if sensitive.

Frequently Asked Questions

Can I use frozen broccoli?

Yes! I highly recommend frozen broccoli since it requires no chopping and won't spoil before you use it. Plus, it works just as well as fresh in this recipe! No need to thaw before using - just stir it in.

How can I make this broccoli cheddar soup thicker?

For a thicker soup, use less broth, add more cheese, or stir in xanthan gum (or another thickener) at the end. Blending more of the soup with an immersion blender can also help create a thicker texture.

Why is my cheese clumping instead of melting?

This happens if the soup isn’t hot enough or if too much cheese is added at once. After adding the heavy cream, let the soup return to a simmer before gradually stirring in the cheese.

Can I freeze broccoli cheese soup?

Yes, but the texture may change due to the dairy. To freeze, let the soup cool completely, store it in an airtight container, and freeze for up to 3 months. Thaw in the fridge overnight and reheat gently in the microwave, on the stove, or in the Instant Pot, stirring often.

This easy broccoli cheddar soup is rich, cheesy, and packed with the best flavor, quickly made in the Instant Pot or slow cooker. It's vegetarian, gluten-free, low carb, and Keto and can be adapted for low FODMAP (see notes) and lactose-free diets. Perfect for a cozy, comforting lunch or dinner!


Ingredients

  • 2 tablespoons extra virgin olive oil or garlic-infused olive oil (for low FODMAP)
  • 2 garlic cloves, minced (omit if using garlic-infused oil)
  • 1 tablespoon unsalted butter or ghee (optional)
  • ½ cup white onion or leek greens (for low FODMAP), finely chopped
  • 3 cups low-sodium vegetable broth or chicken bone broth (see note)
  • 5 cups (about 1 pound) fresh or frozen broccoli, chopped (florets only for low FODMAP)
  • 1 tablespoon dried chives (optional if using onion)
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • 1 teaspoon nutritional yeast (optional)
  • 1-1 ½ teaspoons sea salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground nutmeg (optional)
  • 1 teaspoon Dijon mustard
  • 1 ½ cups heavy cream (lactose-free if needed)
  • 3 cups cheddar cheese (lactose-free if needed), coarsely shredded
  • ½-¾ teaspoon xanthan gum or preferred thickener; amount may vary (optional)
  • For garnish (optional): chopped broccoli, shredded cheese, black pepper, thyme leaves

Instructions

  1. Sauté Aromatics: For the Instant Pot, press “Sauté”. For the slow cooker, please a large skillet over medium heat on the stove top. Once hot, add oil and butter and swirl to coat. If using garlic, add and sauté for 30 seconds, stirring constantly. Add leek greens (or onion) and sauté until softened, about 2 minutes (3-4 minutes if using onion). 
  2. Deglaze: Hit “Cancel” on the Instant Pot. Add 1 cup of the broth, scraping up the browned bits with a plastic spoon or spatula. If using a slow cooker, transfer skillet contents to it now.
  3. Build the Flavor: Stir in dried chives (if using), nutritional yeast (if using), thyme, salt, pepper, paprika, nutmeg (if using), and Dijon mustard. Then, stir in broccoli and remaining 2 cups of broth.
  4. Cook:
    • Instant Pot: Close lid, set to Pressure Cook (Manual) for 5 minutes, then do a quick release.
    • Slow Cooker: Cover and cook on low for 4-6 hours or high for 2-3 hours, until broccoli is tender.
  5. Blend: Remove the lid. Carefully ladle half the soup to a large bowl. Blend the remaining soup with an immersion blender (recommended), regular blender, or potato masher, then stir in the reserved portion for a mix of creamy and chunky textures.
  6. Add Cream: Set the Instant Pot to Sauté on low or the slow cooker to high heat. Stir in heavy cream and wait a few minutes for the soup to start to simmer. 
  7. Add Cheese: Once simmering, stir in the cheddar ½ cup at a time until fully melted and incorporated, scraping the bottom of the pot / slow cooker every so often to prevent cheese from clumping on the bottom. If using a slow cooker, allow to cook on high for an additional 30 minutes until cheese is fully melted, stirring occasionally.
  8. Thicken (Optional): If you prefer a thicker soup, sprinkle xanthan gum over the soup while stirring until to your desired thickness, or use your thickener of choice. Hit “Cancel” on the Instant Pot / turn off slow cooker.
  9. Taste: Taste and adjust seasonings as desired.
  10. Serve: Ladle soup to bowls and garnish with additional chopped broccoli, shredded cheese, freshly ground black pepper, and thyme leaves if desired.
  11. Store: Store in an airtight container in the refrigerator for 3-4 days.

Notes

  • Low FODMAP: Stick to a 1-cup serving if sensitive to fructose. Use garlic-infused olive oil instead of garlic, leek greens instead of onion, and broccoli florets (heads) only. Choose broth and Dijon mustard with low FODMAP ingredients, and opt for lactose-free cream and cheese if needed. While this soup meets low FODMAP guidelines, its high fat content may still trigger symptoms for some with IBS.
  • Broth: You can use my homemade chicken broth and vegetable broth recipes, or you can use store-bought.
