This easy chicken Caesar salad is a simple lunch or weeknight dinner version of the classic, made with juicy chicken, crisp romaine, parmesan, creamy Caesar dressing, and crunchy croutons. Serve it as a hearty salad, or tuck the filling into tortillas, pitas, low carb wraps, or lettuce wraps for easy chicken Caesar wraps.

The chicken can be made with boneless skinless breasts or thighs, then grilled or seared in a skillet, so this recipe works year-round. For even more tender, juicy chicken, use the optional 2-ingredient buttermilk marinade. If you don't have time for a marinade, the simply seasoned chicken still works beautifully because the Caesar dressing brings most of the tangy, garlicy flavor.

For the best flavor, whip up my homemade Caesar dressing in about 5 minutes, although store-bought dressing works when lunch just needs to happen now (we've all been there). Chicken

  • Chicken: Boneless skinless chicken breasts or thighs both work well. If using large chicken breasts, butterfly them by slicing them in half horizontally so they cook evenly. Chicken thighs usually take a few minutes longer to cook than butterflied breasts.
  • Seasoning: The chicken is simply seasoned with sea salt, freshly ground black pepper, and garlic powder. The Caesar dressing brings most of the lemony, garlicky flavor, so the chicken does not need a complicated marinade situation.

Optional Buttermilk Chicken Marinade

For the most tender, juicy chicken, use the optional 2-ingredient buttermilk marinade (not pictured above). It is inspired by my Buttermilk Marinated Chicken Drumsticks recipe and works especially well with chicken breasts, which tend to dry out easily when grilled:

Caesar Salad Base

  • Romaine hearts: Romaine hearts give this chicken Caesar salad the best crunch, which is especially important for wraps and pitas. A regular head of romaine will also work, but the texture may be a bit softer. Use more romaine for salads and a little less for wraps.
  • Parmesan: Freshly grated parmesan has the best flavor and texture. It also usually contains fewer additives than pre-shredded parmesan.

Caesar Dressing

  • Homemade Caesar dressing gives the best flavor, but store-bought works when you need things ready sooner.

Croutons, Optional for Salads

For salads, add croutons if you want extra crunch. I usually skip them for wraps and pitas because they can make rolling and eating a little more chaotic. Delicious chaos, but chaos. You can use one of the following:

  • Pork rinds: Chopped pork rinds are my go-to low carb Caesar crouton. They are grain-free, crunchy, salty, and surprisingly good with Caesar flavors. Don't knock them until you try them! For extra flavor, you can them using the method from my Shrimp Caesar Salad recipe, but they also work straight from the bag.
  • Bread-based croutons: Use your favorite homemade or store-bought croutons if you prefer a more classic chicken Caesar salad.

Wraps or Pitas

  • For chicken Caesar wraps: Use large flour tortillas, low carb tortillas, gluten-free tortillas, or sturdy lettuce leaves.
  • For chicken Caesar pitas: Use soft pita pockets or Greek-style pitas. Pocket pitas can be stuffed, while Greek-style pitas are best folded around the filling like wraps.

Optional Garnishes

Fresh sprouts, lemon wedges, or lemon slices add a little fresh flavor and make the finished salad or wraps look extra pretty. Because sometimes lunch deserves accessories.

How to Make Chicken Caesar Salad

This easy chicken Caesar salad comes together in a few simple steps: prep the dressing and salad ingredients, grill or sear the chicken, then pile everything into a bowl with plenty of creamy Caesar dressing. You can use the optional buttermilk marinade for extra juicy chicken, or keep things quick with simple seasoning when dinner needs to come together without a whole production.

Marinate the Chicken, Optional

For the juiciest chicken, sprinkle chicken with salt to taste and allow to sit at room temperature for 30 minutes. Whisk together the buttermilk and salt in a measuring cup or bowl. Add the chicken to a zip-top bag or shallow dish, pour the marinade over top, then seal or cover.

Refrigerate for 24 hours. The overnight version gives you the most tender chicken, but even a shorter marinade helps. Tiny planning victory.

When ready to cook, remove the chicken from the refrigerator and let it sit at room temperature for about 20 minutes. Remove it from the marinade, let the excess drip off, then pat it dry with paper towel. Season with garlic powder and freshly ground black pepper.

Season the Chicken Without Marinating

Skipping the marinade? Still good. Pat the chicken dry with paper towel, then butterfly any thick chicken breasts by slicing them in half horizontally so they cook evenly.

Season all sides with garlic powder, sea salt, and freshly ground black pepper. Let the chicken sit at room temperature while you prepare the remaining ingredients, but no longer than 30 minutes.

Prepare the Dressing and Salad Ingredients

Prepare a full batch of homemade Caesar dressing, if using. Cover and refrigerate until ready to serve.

Chop the romaine hearts, grate the parmesan, and chop the pork rinds, if using, into ½-inch pieces. For extra flavor, sauté the pork rind croutons in butter and oil as instructed in my Shrimp Caesar Salad recipe. They also work straight from the bag, because sometimes we are just making lunch, not auditioning for a cooking show.

Cook the Chicken

Preheat a grill to medium-high heat, about 400°F (220°C), or heat a cast iron skillet over medium heat on the stovetop. If using a skillet, add 1 teaspoon olive oil once the pan is hot.

Grill or sear the chicken for 4–7 minutes per side, depending on thickness, until the thickest piece reaches 165°F (74°C) on an instant-read thermometer. Chicken breasts will usually cook faster than thighs, especially if butterflied.

Transfer the chicken to a plate and let it rest for 5 minutes before slicing it into ½-inch strips for salad or chopping it into bite-sized pieces for wraps or pitas.

Build the Chicken Caesar Salad

Divide the chopped romaine among plates or shallow bowls. Top with sliced chicken and croutons. Drizzle with Caesar dressing, then sprinkle with parmesan.

Finish with freshly ground black pepper and a squeeze of lemon, if desired.

How to Make Chicken Caesar Wraps or Pitas

To make a Caesar wrap or pita, follow the same steps for making a chicken Caesar salad up to building the salad. Instead, place a tortilla or pita on a plate. Spread Caesar dressing down the middle. Then, add the cooked chicken, chopped romaine, parmesan, and more dressing if you'd like. Optionally finish with a squeeze of lemon juice or a sprinkle of freshly ground black pepper.

For the best flavor contrast, layer the dressing, chicken, romaine, and parmesan directly in the wrap or pita. For quicker assembly, you can toss the filling together in a bowl first, then add it to the tortilla or pita. Just serve right away so the romaine stays crisp.

How to Wrap a Chicken Caesar Wrap

To wrap a chicken Caesar wrap, place the filling in the center of the tortilla, leaving room around the edges. Fold the bottom of the tortilla up over the filling, then fold in the sides. Roll the wrap tightly away from you, keeping the filling tucked in as you go.

If your tortilla is cracking, warm it briefly in the microwave or a dry skillet before filling. And if a little lettuce escapes, congratulations, you made a side salad.

  • Add bacon: Chopped cooked bacon turns this into more of a loaded chicken Caesar salad or wrap. Go easy on the parmesan or pork rind croutons if needed, since Caesar dressing is already salty.
  • Add tomatoes or extra veggies: Cherry tomatoes, grape tomatoes, cucumber, avocado, or roasted peppers all work well. Keep add-ins simple so the Caesar flavor still shines.
  • Make it low carb: Use pork rind croutons for the salad. For wraps, use low carb tortillas or serve the filling in sturdy lettuce leaves.

  • Chicken: Cook the chicken ahead, let it cool, and store it in an airtight container in the refrigerator for up to 3–4 days. Slice or chop it before storing, or keep it whole and cut it just before serving.
  • Dressing: Homemade Caesar dressing can be made ahead and stored in the refrigerator until ready to use. Give it a good stir before serving.
  • Romaine: Wash and chop the romaine ahead of time, then dry it very well and store it in a paper towel-lined container or bag in the refrigerator.
  • Croutons: Store pork rind croutons or bread-based croutons separately at room temperature so they stay crunchy.
  • Salads: Assemble chicken Caesar salads just before serving so the romaine stays crisp. Once dressed, Caesar salad is best eaten right away.
  • Wraps or Pitas: For the best texture, assemble chicken Caesar wraps or pitas shortly before serving. If packing them for lunch, pack the dressing separately for dipping to help keep things from getting soggy.

For the dressing:

  • A full batch of homemade Caesar dressing (store-bought also works), plus more to taste

For the base:

  • 3 romaine hearts, chopped, about 6 cups (use about 4 cups for wraps or pitas)
  • ⅓ cup fresh parmesan, finely grated

For the croutons (for salads, optional):

  • 2 cups unflavored pork rinds, chopped into ½-inch pieces, or your favorite bread-based croutons

For wraps or pitas:

  • 4-6 large flour tortillas, low carb tortillas, lettuce wraps, or pitas

Optional garnish:

  • Fresh sprouts, lemon wedges or slices

Instructions

  1. Optional Chicken Marinade: Sprinkle chicken with salt to taste and allow to sit at room temperature for 30 minutes. Whisk together buttermilk and salt in a measuring cup or bowl.
