Step 1: Sauté the vegetables

Heat a large (12-inch or larger) skillet with high sides or a Dutch oven over medium heat. Once hot, add the oil and swirl to coat. Add the garlic (if using) and sauté for about 30 seconds, stirring constantly so it doesn't burn. Add the bell peppers and onion or leek greens and cook until softened, about 3 minutes.

  2. Brown ground meat: Add ground beef, turkey or chicken and cook until no longer pink, about 5 minutes, breaking it up as you cook so you don't end up with giant mystery chunks.
  3. Add seasoning: Stir in the taco seasoning and smoked paprika and sauté for 30 seconds, stirring constantly.
