Bring something yummy and unique to your next potluck with this zesty, high protein Mexican Street Corn Pasta Salad inspired by elotes, a classic Mexican street food!

creamy elotes pasta salad (high protein) in a white serving bowl.

Chickpea pasta, chicken, crumbled cotija or feta cheese, and a creamy Greek yogurt dressing make this elotes pasta salad high protein and hearty enough for lunch or even dinner! It's kid-friendly, excellent for a crowd, and can also be served as delicious side along with your favorite Mexican-inspired mains, like Instant Pot Carnitas.

This Mexican street corn pasta salad recipe is a smart way to bring new life to chicken leftovers from my Instant Pot Whole Chicken, Buttermilk-Marinated Chicken Legs, or Air Fryer Rotisserie Chicken recipes. However, it's just as tasty without chicken for a vegetarian version. It's also gluten-free with low FODMAP * and lactose-free options.

*Note: While low FODMAP, this pasta salad contains spicy ingredients, which can still be a problem for some with IBS. The recipe provides options to reduce or omit some of the spicy ingredients.

What Sets Mexican Street Corn Pasta Salad Apart

You'll love this pasta salad inspired by Mexican street corn because it's a little different from the usual pasta salad—simple, easy, and loaded with bold, zesty Mexican flavors paired with delicious bites of sweet corn. It features a creamy homemade dressing made with a blend of Greek yogurt and mayo that goes perfectly with your favorite pasta shapes like rotini, penne, or fusilli.

Served cold, it's refreshing and satisfying—ideal for summer BBQs, potlucks, or weekday lunches. This recipe is also high in protein, made without tomatoes (a win for non-fans like me), and offers a fun twist on classic Mexican street corn that's sure to stand out on any table.

What makes it unique:

  • Customizable protein – Add chicken for a protein boost, or keep it vegetarian—either way, it's satisfying.
  • Great for leftovers – Tastes even better the next day, making it a smart make-ahead dish for a potluck, summer gathering, or any lunch or dinner.
  • Kid-friendly flavors – Creamy, cheesy, and mild enough to please picky eaters (jalapeño and cayenne optional!). My kiddo gobbles this up!
  • Dietary-friendly options – Naturally gluten-free and easily adaptable for lactose-free or low FODMAP.
  • Balanced texture – Creamy dressing, chewy pasta, sweet corn, and a bit of crunch in every bite.

Equipment

Here's a list of equipment you'll need to make this high protein Mexican Street Corn Pasta Salad:

  • Large pot with salted water – for cooking the pasta
  • Colander – for draining and rinsing the pasta
  • Cutting board and chef's knife
  • Disposable glove(s) and paring knife (optional): When chopping the jalapeño, consider wearing a glove on the hand that touches the pepper—its juices can irritate your skin. A paring knife works well for finely dicing it with control.
  • Large skillet and spatula (if using canned or frozen corn) – for sautéing and charring corn
  • Grill or grill pan and tongs (if grilling fresh corn on the cob)
  • Large mixing bowl – to assemble the salad. I love these Pyrex mixing bowls with lids as they make preparation and storage so easy for so many recipes!
  • Small mixing bowl – to whisk together the dressing
  • Small whisk – for mixing the dressing
  • Citrus juicer – for juicing the lime
  • Measuring cups and spoons
  • Serving spoon

Ingredients and Substitutions

These ingredients make this creamy Mexican street corn pasta salad high protein and incredibly yummy:

ingredients for mexican street corn pasta salad and dressing across two photos.

For the Pasta Salad

  • Pasta – I chose chickpea pasta to make this pasta salad high protein as well as gluten-free and low FODMAP. I've tested the recipe with Chickpea brand spirals (rotini) and penne, and both have turned out extremely well. Other pasta shapes may also work. Chickpea pasta has such great texture, you'll never guess you're not eating a grain-based pasta! I buy mine locally in BC at Real Canadian Superstore or Nature's Fare. It can also be purchased on Amazon.
  • Oil and Aromatics – I sauté the corn in extra virgin olive oil or garlic-infused olive oil (for low FODMAP). If not needing low FODMAP, I use EVOO and add some garlic powder to the dressing. You could omit the garlic entirely (oil or otherwise) from this recipe and it's still delicious.
  • Corn – You can use fresh corn on the cob, canned corn (drained and rinsed), or frozen corn that's been thawed, depending on what's easiest and in season.
  • Cooked Chicken – I use leftovers from my chicken recipes mentioned above or Buttermilk-Marinated Roast Chicken from Salt, Fat, Acid, Heat, which is a great, neutrally flavored chicken. It's easiest to use chicken breasts as the meat from other parts may not chop as cleanly.
  • Cheese – Cotija cheese is traditionally used on Mexican street corn, but if you're like me and can't find it locally, feta cheese is also delicious, similarly flavored and textured, as well as low FODMAP.
  • Onion – I find the tender green tops of green onion work best for cold salads.
  • Fresh Herbs – I provide a range of cilantro quantity as some people just aren't fans. Or, if you just can't stand it in any amount, parsley will also work.
  • Jalapeño – A jalapeño adds a touch of heat to this Mexican-inspired pasta salad, but it can be left out. I find it doesn't add a ton of spiciness to the dish.

For the Creamy Homemade Dressing

  • Greek yogurt – Makes this pasta salad dressing protein packed and super creamy! Use lactose-free if needed.
  • Mayo – I love avocado oil mayo, but you could use any mayonnaise of your choosing to add richness to the dressing.
  • Lime juice – Adds tanginess to the dressing as well as Mexican-inspired flavors.
  • Seasonings – I add sea salt, chili powder, smoked paprika, cumin, garlic powder (if not using garlic-infused oil for low FODMAP above), black pepper, and cayenne for extra heat, but that's optional.

Toppings (Optional)

Optional but beautiful toppings for this pasta salad include extra chopped cilantro or parsley, lime wedges or slices, additional crumbled cheese, or a sprinkle of charred corn.

How to Make Mexican Street Corn Pasta Salad

how to make mexican street corn pasta salad steps 1-4.

Follow these simple steps to make elotes pasta salad:

  1. Cook the pasta – Bring a large pot of salted water to a boil and cook your chickpea pasta (or any gluten-free pasta you love) until it's tender but not mushy. When using Chickpea brand rotini or penne, I boil it a full 8 minutes. Drain, rinse under cold water to stop the cooking, and set aside.
  2. Get your corn sizzling – You've got two tasty options here:
    • Using canned or frozen corn (pictured above) – Heat a large skillet over medium-high heat. Add a little oil and toss in the corn. Let it cook for 5-7 minutes, stirring occasionally, until you see some charred pieces of corn. That's the flavor! Transfer to a plate to cool.
    • Grilling fresh corn – Fire up the grill or grill pan to medium-high (about 400°F / 200°C). Husk your corn and lightly brush it with oil. Place it straight on the grates and grill for about 10-12 minutes, turning every few minutes until it's charred and tender. Let it cool, then slice off the kernels with a sharp knife. Holding the cob with a folded paper towel helps keep your hand cool while chopping.
  3. Toss the salad – In a big bowl, combine the pasta, corn, diced chicken (if using), cheese, green onions, cilantro, and jalapeño. Save a little corn or cheese to sprinkle on top later if you want to make it fancy. Pop the bowl in the fridge while you mix up the dressing.
  4. Make the dressing – In a small bowl, whisk together the Greek yogurt, mayo lime juice, salt, chili powder, smoked paprika, cumin, garlic powder (if using), black pepper, and cayenne (if you're feeling spicy). The dressing should be creamy, zesty, and smell amazing.
steps 5-6 for how to make elotes pasta salad.
  1. Bring it all together – Pour that dreamy dressing over the salad and gently toss until everything's well coated. Give it a taste—add more lime juice, salt, or cilantro if it needs a little something.
  2. Chill and serve – Cover and refrigerate for at least 30 minutes (overnight is even better for flavor). Serve it cold, straight from the fridge, either as a hearty lunch, dinner, or a crowd-pleasing BBQ side dish. Garnish with optional toppings like chopped herbs, lime wedges, crumbled cheese, or a handful of charred corn sprinkled on top.
  3. Store – Keep any leftovers fresh by storing them in an airtight container in the fridge for up to 4 days.

Frequently Asked Questions

Can you freeze pasta salad?

Freezing pasta salad isn't recommended. Pasta salads with mayo and Greek yogurt tend to separate and lose their creamy texture once thawed, and the pasta can become mushy. This salad is best enjoyed fresh or stored in the fridge for up to 4 days.

When making pasta salad, should you rinse the pasta?

Yes! After cooking, rinse the pasta under cold water to stop the cooking process and remove excess starch. This helps keep the pasta from sticking together and makes for a better cold pasta salad.

Will this pasta salad get soggy overnight?

Not this one! In fact, this Mexican pasta salad gets more flavorful as it sits and chills. For the best texture and presentation, wait to add any toppings (like extra cheese or herbs) until right before serving.

What kind of pasta works best?

Short pasta shapes like penne, rotini, or fusilli hold the dressing well and are easy to eat cold. Chickpea pasta works great for a high protein, gluten-free option, but you can also use your favorite pasta variety that fits your dietary requirements.

Description

This creamy, zesty Mexican Street Corn Pasta Salad is a fun, high protein twist on elotes—loaded with chickpea pasta, a homemade chili-lime dressing, and plenty of sweet corn. Perfect for summer meals, potlucks, or meal prep, it's gluten-free with vegetarian and low FODMAP options (see notes). Make it a day in advance for even better flavor!

Ingredients

Units Scale

For the Pasta Salad:

  • 8 ounces chickpea pasta (rotini, penne, or fusilli) or your preferred gluten-free pasta
  • 1 tablespoon extra virgin olive oil or garlic-infused olive oil (for low FODMAP)
  • 3 cups sweet corn kernels - fresh (from about 4 large ears), canned (drained and rinsed) or thawed frozen corn (see note for low FODMAP)
  • 2 cups cooked chicken, diced (optional, omit for vegetarian)
  • ¾ cup cotija or feta cheese (for low FODMAP), crumbled
  • 1 cup green onion, green tops only, chopped
  • 2-3 tablespoons fresh cilantro (or parsley), chopped
  • 1 jalapeño, seeds and ribs removed, finely diced (optional)

For the Creamy Dressing:

  • ⅔ cup plain Greek yogurt, lactose-free if needed
  • ½ cup avocado oil mayo (or your preferred mayonnaise)
  • 1 tablespoon lime juice, freshly squeezed
  • 1 teaspoon sea salt, plus more for sprinkling
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon garlic powder (omit if using garlic-infused oil)
  • ¼ teaspoon black pepper
  • ¼-½ teaspoon cayenne pepper (optional, depending on desired heat level)
  • Toppings (optional): cilantro leaves, lime wedges, cotija or feta cheese

Instructions

  1. Cook the Pasta: Cook chickpea pasta according to package instructions, ensuring the water is well salted. Rinse cooked pasta under cold water and drain well.
  2. Char or Grill the Corn:
    • If using canned or thawed frozen corn: Heat a large skillet over medium-high heat on the stovetop. Once hot, add oil and swirl to coat the skillet. Add corn, sprinkle with a little salt, and sauté for 5-7 minutes, stirring occasionally, until slightly charred. Transfer to a plate to cool.
    • If grilling fresh corn on the cob: Preheat your grill or grill pan to medium-high heat (about 400°F / 200°C). Husk the corn and lightly brush with oil and a sprinkle of salt. Place corn directly on the grill grates. Grill until the corn is tender and nicely charred in spots, about 10-12 minutes total, turning every 2-3 minutes. Let cool slightly, then holding the cob with a paper towel, use a sharp knife to slice the kernels onto a large plate. Set aside to cool.
  3. Assemble the Salad: To a large bowl, add chicken (if using), cheese, green onion, cilantro, jalapeno, cooked pasta and charred corn (reserving a portion for garnish if desired) and toss to combine. Cover and pop in the refrigerator to chill while you make the dressing.
  4. Make the Dressing: In a small mixing bowl, whisk together Greek yogurt, mayo, lime juice, salt, chili powder, smoked paprika, cumin, garlic powder (if using), pepper, and cayenne (if using). Pour over the salad and gently toss until well coated.
  5. Taste: Taste and adjust seasonings, lime juice, and cilantro if needed.
  6. Chill and Serve: Cover and chill for a minimum of 30 minutes (preferably overnight). Optionally top with charred corn, cilantro leaves, lime wedges, or cheese. Serve cold as a main or side dish alongside your favorite Mexican-inspired dishes, like my Instant Pot Carnitas.
  7. Store: Leftovers can be stored in an airtight container for up to 4 days.

Notes

  • Serving sizes: If making this pasta salad for lunch or dinner, I recommend a serving size of 1 ½ cups (25 grams of protein per serving), making 6 total servings. If making it as a side dish for a crowd, serving sizes would be around ½-¾ cups each for 12-18 servings (8-12 grams of protein per serving).

Low FODMAP Tips:

  • Use garlic-infused olive oil instead of regular olive oil and omit garlic powder from the dressing. You can also omit the garlic entirely without much impact on flavor.
  • If sensitive to fructans, reduce corn to 2 ½ cups if making it for lunch (6 servings at 1 ½ cups per serving). The corn quantity should be fine as is if serving as a side dish (12-18 servings at ½ to ¾ cup per serving).
  • If omitting the chicken, reduce the maximum serving size to 1 ⅛ cups.
  • Use feta cheese instead of cotija, which hasn’t been tested for FODMAPs (although there are ways to tell if cheese is low FODMAP)
  • Choose lactose-free Greek yogurt.
  • Ensure your chili powder blend doesn’t contain high-FODMAP ingredients.
  • Spicy ingredients like jalapeño, chili powder, and cayenne may still be problematic for some with IBS.
  • Prep Time: 20 minutes
  • Chilling Time: 30 minutes
  • Cook Time: 10 minutes
  • Category: Salads and Bowls
  • Method: Stovetop

ABSOLUTELY FANTASTIC!!! One of the best pasta salads I’ve had ever. The sauce is creamy and tangy, it pairs so well with the brighter and spicy flavors in the rest of the salad! My fiance loved it too, so we’ve found a new warm weather meal prep 🩷.

Hi Kristen! This pasta salad is best served chilled or at room temperature. It's okay if the pasta and corn are still a little warm when you first mix it all together, but I wouldn't recommend reheating it once the dressing has been added.

So good! Easy to throw together, I used shredded rotisserie chicken I had on hand . Also my garden was in peak season so added some halfed cherry tomatoes and chopped bell peppers, but totally would be just as good without!
