with Mashed Potatoes & Gravy

Low FODMAP Instant Pot Turkey Meatballs 


Add meatball ingredients to a large mixing bowl

Mix with your hands to combine

Roll into 2-tablespoon balls

Place on a platter and set aside

Gather gravy ingredients

Hit "Sauté" on the Instant Pot and add ghee or butter to melt. Once melted, hit "Cancel."

Add remaining gravy ingredients, whisk to combine

Place chopped potatoes evenly (more or less) in the gravy

Place vegetable steamer basket over potatoes and gravy

Place meatballs in a single layer (as much as possible) on vegetable steamer basket. Pressure cook 8 minutes.

Quick release pressure and open lid. Check temperature of meatballs. Remove basket to a platter.

Using a slotted spoon, remove potatoes to a mixing bowl, leaving liquid in the pot

Add mashed potato ingredients to the mixing bowl with the potatoes. Mash until to your desired consistency.

Hit "Sauté" on the Instant Pot and wait for the liquid to bubble. Sprinkle xanthan gum (or other thickener) while whisking.

Whisk and reduce until gravy is to your desired thickness. Hit "Cancel" and remove gravy from the Instant Pot.

Serve meatballs and gravy over mashed potatoes and enjoy!
